The Champagne Treasure Trove: Our First Vintage Offers from Perseval Farge! Two Drop Dead Gorgeous Wines

At some winemakers, there is The List and then, there is the list.  There are some wines that they don't make a lot of and drink themselves or give away to friends or sell to a small number of good customers.  And then, one day, after you sell a good amount of their wines, they appear at the tasting table.  I was always curious about were the vintage wines of Perseval Farge. Isabelle knew that.  Now that I've moved up the food chain a bit (read: sold a ton of wine) I have access to the vintage Champagnes. I have chosen two today as both are so delicious, so limited and yes, so cerebral (one more than the other) that I had to offer them both. Both of these are extremely limited and just stunning wines. 

Up first is the 2003 Perseval Farge Brut, which can be had for $57.99 a bottle on a 3-pack. These are uber limited.  Total production is fewer than 1,000 bottles . This one is almost a total BDB: it is 95% Chardonnay and 5% Pinot Noir. Only 2 grams of dosage in this one as there is ample fruit. Mineral, structure and depth. The nose is all yeast and brioche. So giving and clean. The palate is so sappy and elegant with tremendous grip and palate coverage. The mousse is so fine. So fine. It's so sappy and rich but has such and amazing amount of fruit for a wine that has such low dosage. Really remarkable. It has terrific energy on the palate with all that fruit. It has the depth and nobility of a vintage Champagne. Reminds me of Jean-Baptiste without the oxidized elements. Acid, mineral and fruit are balanced by the astonishing soft yet present mousse. This is awesome and is drinking so well now. This is 65% Delicious and 35% Cerebral. This is very limited.

The 2007 Perseval Farge ($67.99) Brut is a showstopper and a super serious, super Cerebral wine.  80% Cerebral and 80% Delicious (yes I know that that adds up to more than 100% but hear me out).  Man is this stuff insane. Maybe the best Perseval Farge wine I've ever tasted. It's 57% Pinot Meunièr and 43% Chardonnay and man I'm so happy to sell a vintage wine from Perseval Farge that is Pinot Meunièr based. It's got Proustian levels of cerebral expressiveness. The aromas are super complex. Feral, gorgeous ocean spray aromas. The palate is sappy and intense with serious grip and depth. Man this is intense in the mouth. Just takes over. It's bone dry yet seamless and elegant and OMG is it complex on the palate. Super concentrated and explosive with dazzling purity and freshness. Terrific pure fruit on the finish and so long and so delineated. Stunning. Brilliant wine that will age 10-15 years easy. So serious. Fewer than 1,200 bottles made.
